ABSTRACT
The article focuses on the classic pesto sauce produced in Liguria, Italy. Ligurian pesto sauce, which is considered an icon of cultural identity, is made by slowly simmering pesto with rich meat, milk and wine. The ingredients of pesto genovese are basil, pine nuts, garlic, salt, cheese and olive oil. In Liguria, pesto is used to sauce trenette, a local variety of dried fettucine, fresh tagliatelle and tagliarini.
